Grilled Salmon & Shrimp Skewers with Almond Pesto!
Almond Pesto
3 large handfuls fresh basil
1/4 cup sliced almonds
1/4 cup olive oil
Juice of half a lemon
6 garlic cloves, chopped
Light salt
Black Pepper
Put salmon fillets (cut in 1 inch cubes, and shrimp (peeled, deveined, tail on) in large ziplock bag with half the pesto to marinade for 4-6 hrs.
Assemble kabobs (I kept salmon & shrimp separate due to different cooking times)
Serve with a side of quinoa and grilled lemony zucchini!!
