Shuko, a Sushi Restaurant, to Open in East Hampton

Sources tell Patch that Shuko, a new pop-up restaurant, is gearing up for a July 1 opening in the space which until earlier this month housed the Highway Diner & Bar, next to the World War II tank, on Montauk Highway, in the hamlet of Wainscott, in the Town of East Hampton.

Chef Nick Kim, who trained at Masa in the Time Warner Center and most recently worked at Neta in the West Village will helm the kitchen. Nick was profiled in Opinionated About Dining Magazine  and Neta has been cited as one of the “17 Hottest Sushi Restaurants in America by Eater.

The restaurant will be open for the summer season with plans to shutter in the middle of September.
