Florence Fabricant of The New York Times wrote about lawyers Steven Judelson and his wife Natalie evaporate water from the ocean to make sea salt, a business endeavor that started last May.

"After experimenting, they developed a method in which they filter the water to remove sand and silt and then slowly evaporate it in the sun to avoid having it dry too quickly, which can make the salt bitter. They use no chemical agents. “We’re trying to do something we love, but not many people are crazy enough to do this,” Ms. Judelson said."
