Chef Ready for 'Endless Summer'

Peter Ambrose has partnered with fishing fleet to bring in fresh, local fish.

Peter Ambrose is finally going into business for himself, just in time for summer.

After 29 years catering out of the in Wainscott, Ambrose is taking his passion for food and opening up a fish market, gourmet take-out shop and catering company all his own.

Hampton Seafood Company is slated to open April 4 in the former space in East Hampton Village, which he has completely renovated to be more open. Peter Ambrose Events and Endless Summer Catering, the clam bake and BBQ arm of the catering company, have moved into in between the shop and Race Lane Liquors.

Fresh fish won't be a problem to come by. At the shop, Ambrose is partnering with Gerald Herlihy and Butch Payne, who have a fleet of fishing boats in Montauk — Alexandria Dawn, Gabrielle and Paige, Panther, Longshot, Sea Devil and Virginia Reel. They bring in sea scallops, waved whelks, tile fish, monkfish, lobsters, tuna, sword, mako, mahi mahi, and more. "We will have a supply of the best Montauk and Nantucket have to offer," Ambrose said.

The market will also prepare fish-and-chips and sandwiches, soups, but Ambrose also plans on offering organic and vegan-friendly dishes, like stuffed pepper, quinoa salad, and tai curry chowder. "I want to take it up a notch," he said.

Being a participant in the 's Wellness Challenge (He's already lost over 30 pounds), he's been trying different dishes. Just because they're healthy, doesn't mean they won't taste good, he promised. "I'm a foodie. I just want to put delicious, great food in here," he said.

He also plans on offering Coffee, sushi rolls, and bottles of his BBQ and marinades, known as Pete's Endless Summer.

And, Ambrose's father might even get in on the action. Joe Ambrose, a retired math teacher, may host a "happy hour" at Smokin' Joes Raw Bar, geared toward those getting off work, or the train across the street, who can't wait to get their first taste of summer.
